Chocolate Peppermint Sandwich Cookies

Make the cookies:

Whisk flour, cocoa powder, baked soda, baking powder, and salt together.

Cream together butter, shortening, and granulated sugar with a stand mixer.

Stir in eggs, then melted chocolate and vanilla extract.

Stir in dry ingredients until a dough forms.

Divide dough, wrap and chill for 1 hour.

Roll out chilled dough and cut into rounds.

Bake for 10-12 minutes and cool completely.

Beat confectioner's sugar, corn syrup, shortening, milk, & peppermint extract until creamy.

Make the filling:

Stir in crushed candy canes or peppermints.

Divide between 2 bowls and dye one portion red (optional).

Place a small ball of both red + white fillings on a cookie.

Top with a second cookie and press gently to spread filling.
