A Rebujito (Sherry Cocktail) at Jaleo

There were two very specific highlights from my trip to Washington, D.C. last weekend.
One of them was my visit to Julia Child’s kitchen at the Smithsonian National Museum of American History!
The second was a cocktail I had at Jaleo, the restaurant where chef José Andrés goes wild with Spanish tapas.

I’m not one to rave about drinks over food, but I fell head over heels for the rebujito, a mix of white sherry and lemon soda served in a half carafe.
The silkiness of the sherry smoothed out the bite of the lemon, making it the perfect drink for a breezy September night where I could feel the edge of summer softening.
Usually I stick to wine or beer, so I was therefore convinced that the rebujito required some fancy mixing.

When I did some research in search of the perfect recipe, I discovered that couldn’t be further from the truth. The rebujito is one of the simplest cocktails on the planet.
The rebujito hails from Andalucia, where it’s the drink of choice at day-long outdoor festivals. Revelers use it to re-hydrate as well as maintain a light buzz.
I also found out that rebujar means “to mix,” which is probably something I once learned in high school Spanish.

And don’t be afraid to mix things up—I made a round of rebujitos with red sherry instead of white (as they do at Jaleo) and it was every bit as good as the original.

The Rebujito is a variation on the traditional sherry cobbler cocktail, which blends sherry, citrus juice, and sugar over crushed ice.
Typically, the drink is composed with fino sherry and lemon-lime soda, such as Sprite or 7-Up.

In Europe, these soft drinks are sometimes called “lemonade,” but don’t be fooled. In this case, you want something with bubbles.
If you don’t specifically have fino sherry in the house, don’t worry. Substitute any dry sherry: fino, manzanilla, amontillado, palo cortado, and oloroso will all work fine.

And if soda isn’t your thing and you prefer a less sweet drink, you can also swap in tonic water or citrus seltzer.
Fresh lemon and mint jazz up the rebujito as garnishes. Again, this is a very simple drink, so if you only have one or the other, don’t sweat it.

Ingredients
- 2 fluid ounces (1/4 cup) sherry
- 4 fluid ounces (1/2 cup) lemon-lime soda (like 7-Up), tonic water, or citrus seltzer
For Garnish
- lemon wedge or wheel
- mint sprig
Instructions
- Fill a Collins glass or other tall cocktail glass with ice.
- Pour in the sherry, then the soda, tonic water, or seltzer.
- Garnish with lemon and/or mint, and serve.
