Fugging Awesome Spinach Dip

Today’s guest post comes courtesy of authors Heather Cocks and Jessica Morgan, the two driving forces behind Go Fug Yourself.

Spending each day mocking the underdressed and underfed works up quite the appetite, and the Fug Girls are happy to share one of their favorite party dip recipes.

This spinach dip is a great accompaniment for watching the Final Four, the Golden Globes, or just sitting around wearing your favorite cotton-candy iceberg dress.

Sporting events tie with awards-show viewing parties as the best time of year to bring people together through finger food.

Even if you couldn’t care less what a March Madness bracket is, or who’s playing in the Super Bowl, you probably turned up to your friend’s house to watch because he or she promised you good company and killer new dip.

(In fact, one Web site does a special feature every Friday for this purpose; its Buffalo Chicken Dip is a must-try, but we warn you, it’ll be tough not to plow through it all in one sitting.)

So if you’re considering using this weekend’s Final Four hoops games as an excuse to party, we two inveterate snackers present one of our standby party dip recipes.

Consume with friends, or yourself. We won’t judge. We’re too busy eating.

The creamy blue cheese and bacon dip, served with homemade barbecue potato chips (trust us, the combo works), is something we make a point to eat–usually with GFS’s very own Casey–every time we’re in town.

Which we wish was right now, because after all this dip talk, we’re starving.

Our spinach dip might have a slight Semi-Homemade aura (especially since it’s adapted from the back of a box of Knorr soup mix), but it’s extremely delicious.

And it’s easy to make, as evidenced by the fact that one of us once made it after stumbling home on New Year’s Eve and it still turned out great.

Note: do not try this at home unless you’re really good at drunk chopping.

It’s best served in a hollowed-out loaf of sourdough with cubes of bread and veggies–chips may not be sturdy enough to stand up to this.

Fugging Awesome Spinach Dip

Yield: 2 cups
Prep Time: 15 minutes
Additional Time: 2 hours
Total Time: 2 hours 15 minutes

Serve this spinach dip in a loaf of hollowed-out sourdough bread if you're fancy, or on its own with crudité and bread cubes.

Ingredients

  • 1 (10-ounce) package frozen chopped spinach, thawed
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/2 packet of Knorr "Spring Vegetable Soup" mix
  • 1/2 packet of Knorr "Leek Soup" mix
  • 1 can water chestnuts, chopped
  • 3 green onions, chopped (the whole onion, both white and green parts)
  • 1 teaspoon lemon juice
  • 1 loaf sourdough bread, for serving

Instructions

  1. Squeeze all excess water from the spinach and combine with sour cream and mayo.
  2. Add both soup mixes, water chestnuts and green onions.
  3. Stir really well and refrigerate for at least 2 hours, but ideally overnight.
  4. Before serving, add lemon juice to taste (you can also substitute a splash of the juice from a container of green olives if it's New Year's Eve, you're drunk, and you're out of lemons. Seriously, that actually worked. But we don't advise it).
  5. To serve in a loaf of sourdough bread, carefully "carve" a circle into the bread as you would around the stem of a pumpkin with a small serrated knife.
  6. Scoop out enough bread to fit the dip and slice the leftover crust into cubes for dipping.
  7. Serve with your favorite vegetables like carrots, celery, peppers, radishes, or cherry tomatoes.

  1. YUM ladies! I love making spinach dip but didn’t think about using 1/2 packs each of the veggie AND leek soup – I just use the veggie soup.

    Gonna try these all.

  2. Here’s my fave…

    Brown one roll of Johnsonville reduced fat sausage in pan, drain. In 8″ square baking dish, put 1/3 red. fat cream cheese block. Dump hot sausage over top. Add 1 can of diced tomatoes with chilies. Stir together. Bake at 375 for 25-30 minutes. Serve with Fritos Scoops. BEST EVER.

  3. Oh my, this is perfect. I am looking forward to comments of readers with their own dip recipes. We are throwing my flatmate a “dip” party- everything served is going to be stuff you can dip into other stuff.
    hey, we’re college kids, we don’t have much in the way of fancy silverware or large tables for lots of formal seating, but we have tons of little containers/bowls/shot glasses and we can steal napkins form the dining hall. :D
